Artichoke Guacamole

It’s time for the ultimate appetizer for any occasion! This artichoke guacamole has a 3 way green factor with artichoke hearts, avocado and salsa verde. 3 greens and 3 amazing flavors that come together perfectly. I love how this recipe really utilized the whole artichoke. The hearts bring tons of great flavor to the dip and you can also use the leaves to scoop it up too! 

As summer comes to a close and football season begins this time of year is officially appetizer and dip season! To me, football season is all about the food and fun new twists on classics are always the best crowd pleasers. I can’t wait to bring this artichoke guacamole to the next game! INGREDIENTS

8 cooked, large Ocean Mist Artichokes

(See How to Cook Artichokes for a variety of cooking methods)

1 lime or lemon

½ of a ripe avocado

1/4 cup of your favorite salsa verde

2 cloves of fresh garlic, minced

Salt and pepper, to taste

 

DIRECTIONS

  1. Start with 8 cooked, large Ocean Mist artichokes. Remove the hearts and bottoms from the artichokes and place in a medium-sized bowl. Mash artichoke hearts and bottoms with fork until smooth or place in a food processor. Add the juice from 1 lime or lemon, avocado, garlic and blend to combine. 
  2. Add the ¼ cup of your favorite salsa verde. Blend all the ingredients together and season with salt and pepper to taste. Serve with artichoke leaves, your favorite whole grain snack cracker or tortilla chips!
